Prepared another quick one pot dish for tonight with potato, chicken fillet and assorted mushrooms serve together with lotus roots soup and mixed rice.Ingredients 1/2 Chicken breast, cut into strips 2 medium potato, sliced 1 small onion, sliced 100g assorted mushroom 1 tsp oyster sauce some spring onion4 slices ginger.Method 1. Lightly fry potato on both side till browned, add onion and give it a quick stir2. Push potato aside, add in marinated chicken fillet (marinate with ginger juice, light soy sauce, pepper, sesame oil and cooking wine) and seared it on both side3. Next stir in half of the spring onion and mushrooms then season it with oyster sauce 4. Lastly add in enough hot water to cover the mixture, lower the heat and simmer for for 3-5 minutes till potato soften 5. Scatter remaining spring onion and serve and serve with steamed rice
