Chicken Stew & Teriyaki Salmon or Cod Fillet

Pan-fry Salmon / Cod Fish
4 pieces of salmon/cod fish
a few slices of ginger
some scallion, cut into sections

SAUCE
1 tbsp mirin
1 tbsp bottled unagi sauce
50ml hot water
.
Method
1. Lightly marinate fish fillet with 1/2 tbsp mirin, salt and pepper
2. Preheat skillet with 1/2 tbsp oil and saut ginger and white part of scallion for 10 seconds
3. Dust fish fillet with cornstarch then pan-fry over medium low heat for 2 minutes on each sides or till golden brown
4. Lastly drizzle sauce mixture over the fish and simmer for 15-20 seconds
5. Remove and serve
