Channa masala / chole | Gayathiri's Cookbook

Channa masala also known as whole masala or whole is a traditional Punjabi dish.This chana masala recipe comes together quickly with mostly pantry ingredients, but the end result tastes super fresh.

Ingredients:
Chick peas-1 cup
Oil- 4 tbsp
Bay leaf- 2
Cinnamon stick- 1
Fennel seeds- 1/2 tsp
Onion- 1
Tomatoes- 2
Ginger garlic paste- 1 tsp
Turmeric powder- 1/2 tsp
Salt- 1 tsp
Sugar- 1 tsp
Cumin powder- 1 tsp
Coriander powder- 1tsp
Garam masala powder- 1 tsp
Red chilli powder- 1 tsp
Coriander leaves- For garnishing

Directions:

1. Soak 1 cup channa(Chick peas) overnight.Then pressure cook soaked peas for upto 4 whistles wih 1/4 tsp salt. Keep it aside.
Or soak it in hot water for 2 hours and then pressure cook the soaked peas with little salt for upto 4 whistles.Keep it aside.
or you can use canned chick peas.Rinse and drain the chick peas and then add it to the gravy.

2. Heat 2 tbsp oil in a pan. Add 2 bayleaves, 1 cinnamon stick and 1/2 tsp fennel seeds.Then add and saute onion(1 Big) until translucent.
3. Add 2 green chillies,1 tsp ginger garlic paste and saute for a minute.
4.Add and cook 2 tomatoes until soft.When the tomatoes has cooked,add 1/2 tsp turmeric powder,3/4 salt and 1 tsp sugar and saute for 2 minutes.
5.Now add 1 tsp coriander powder,1 tsp jeera powder,1 tsp garam masala powder and 1/2 tsp red chilli powder. Add 1/2 cup water and cook until oil separates.
6. In the mean time, grind 1/4 cup boiled chana into a paste.
7. Add the ground paste and the boiled chana and cook for 3-5 minutes. Garnish with coriander leaves and serve.

Channa masala is ready!!
