Brinjal tomato kothsu/Gothsu | Gayathiri's Cookbook

Brinjal tomato Gothsu is a South Indian gravy which is prepared with brinjal,tomatoes and moongdal. It tastes great with venpongal and Arisi upma.

Ingredients:
Brinjal- 4
Tomatoes- 4
Green chillies- 3
Oil- 2 tsp
Mustard seeds- 1/4 tsp
Curry leaves- 1 sprig
Turmeric powder- 1/4 tsp
Toordal-1/2 cup
Moongdal- 1/2 cup
Hing- A pinch
Red chilli powder- 1 tsp
Sambar powder- 1 tsp

Directions:
1.Pressure cook 1/2 cup toordal and 1/2 cup moongdal together for 4 whistles. Keep it ready.
2. Heat 2 tsp oil in a pan. Add mustard seeds. When it starts to crackle, add tomatoes, green chillies and curry leaves.
Cook until the tomatoes are soft.
3. When the tomatoes are cooked, add brinjal, turmeric powder, salt and hing. Cook until the brinjals are soft.
4.Add 1 tsp sambar powder, 1 tsp red chilli powder and 1 cup water.Cook until the raw smell of the powders goes away.
5.Then add the mashed dal.Let it boil for another 2-3 minutes.
Garnish with coriander leaves.

Gothsu is ready!!
