Cut peaches into small dice and add to medium bowl. 2) Cut red onion into a small dice and add to peaches. 3) Add about 1 Tbsp. of minced cilantro to peaches.4) Squeeze lime over peaches. Add salt, stir well5) Drain black beans in colander and add to small bowl6)Add 1 Tbsp water and cumin, season with s&p7) Mash beans into a chunky paste. Microwave for 30-60 seconds to warm. Set aside.8) Fry tortillas. Pour a think layer of oil into pan, 1/4 inch deep. Heat pan over high heat for 2 minutes.9) Use tongs to slowly place tortilla in skillet. Fry until the edges are golden brown, about 30 seconds.10)Carefully, flip tortilla. Fry additional 30-40 seconds until golden.11 Rimove to plate with paper towel. Sprinkle with salt. Repeat steps 9 and 10 for remaining tortillas.12) Build tostadas. Smear beans on each tortilla. Sprinkle with salsa and cheese.
