Bhindi masala is a popular and delicious semi- dry gravy made with okra, onion, tomatoes, and some mild spices. My secret ingredient to this recipe is the pasta sauce which adds bright red color to the gravy. My kids eat anything with pizza sauce, so I added pizza sauce to the bindi masala to make them eat it when they were little. Even after 15 years, this continues : )Ingredients:Okra/Vendaikai- 10-15Onion-1Tomatoes- 4Oil- 4 tbspJeera- 1 tspTurmeric powder- 1/2 tspSalt- 1 tspSugar- 1 tspGreen chillies- 2Cumin powder- 1 tspCoriander powder- 1 tspGaram masala powder- 1 tspRed chilli powder- 1 tspPasta sauce(optional)- 1/2 cupCoriander leaves- For garnishingDirections:1. Cut okra into big pieces.Keep it ready.2. Heat 2 tbsp oil in a pan. Add 1/4 tsp jeera .When the jeera starts to crackle add the cut okra. Cook with 1/4 tsp turmeric powder and a pinch of salt. 3. Saute until the vegetables are cooked. Cook until tender. Keep it aside.4. Heat oil in a pan. Add 1 tsp Jeera. When the jeera starts to crackle, add 2 green chillies and onion. Saute until translucent.5.Puree 4 tomatoes in a blender and add it to the pan.6.Add 1/2 tsp turmeric powder, 3/4 tsp salt and 1 tsp sugar. Saute for a minute.7. Then add 1 tsp Jeera powder, 1 Tsp Coriander powder, 1 Tsp garam masala powder and 1/2 - 1 Tsp red chilli powder. Add 1/2 cup water and cook until the raw smell of the powders go away.8.Optional: You can add 1/2 cup pasta sauce. (to get bright red color).9. When the masalas are cooked, add okra . Let it cook for 2 minutes.Garnish with coriander leaves.
