Avial is a traditional brahmin recipe. It is made from mixed vegetables(White pumpkin, raw banana,potato, carrot, suran, green beans), coconut paste and yogurt and finally seasoned with coconut oil and curry leaves.Ingredients:White pumpkin- 2 cupsCarrots- 2Beans- 20Potato- 2Suran- 1 cupRaw banana- 2Brinjal- 3 or 4Shredded coconut- 1 cupGreen chillies- 4 or 5Jeera- 1 tspYogurt- 1 cupCoconut oil- 1 TbspCurry leaves- 2 sprigsTamarind juice- 1/2 cupTurmeric powder- 1/4 tspSalt- 1 tspHing- A pinchDirections:1.Cut all the vegetables into large pieces.Soak a small piece of tamarind in water and extract the juice.2. Take all the vegetables in a thick bottomed vessel.Add turmeric powder, salt and hing.Cook until the vegetables are soft.3. Grind coconut,green chillies and jeera into a fine paste. When the vegetables are cooked, add the ground paste. Let it boil for another 2-3 minutes.Add 1 tsp of coconut oil and curry leaves. Switch off the flame.4. Let it cool down a bit. Then add a cup of yogurt and mix well.Avial is ready!!.
