Aloo Methi Dry Curry/Aloo methi subzi | Gayathiri's Cookbook

Fenugreek /Methi leaves are rich in fiber and have high amounts minerals and vitamins.This Aromatic leaves can instantly enhance the flavor of any food.

Ingredients:
Methi leaves- 1.5 cups
Potatoes-4
Onion-2
Tomatoes- 3
Oil- 2 tsp
Jeera- 1 tsp
Ginger garlic paste- 1 tsp
Turmeric powder- 1/2 tsp
Salt- As needed
Hing- A pinch
Jeera powder- 1 tsp
Coriander powder- 1 tsp
Red chilli powder- 1/2 tsp
Garam masala powder- 1 tsp

Directions:
1.Heat 2 tsp oil in a pan. Add jeera.When jeera starts to crackle, add ginger garlic paste and saute for a minute.
2.Add onions and sauté until translucent.
3.Add tomatoes and cook until soft.
4.When the tomatoes are cooked, add potatoes, turmeric powder, and salt.
5. Close the lid and cook for 5-7 minutes.When the potatoes are cooked, add jeera powder, coriander powder, red chilli powder, hing and Garam masala powder.Saut until the garam masalas are cooked.
6.Then add methi leaves and cook until the leaves have wilted.
Sprinkle some water if it is too dry.
Switch off the heat when everything has coombined together.

Aloo methi curry is ready!!
