Abalone Mee Suah -

prepared this comfort for breakfast today instead of the usual toast and coffee

Lets start cooking.

Ingredients
1-2 bundle dry mee suah (
50g marinated minced meat
4 mini abalone, optional
3 stalks baby bok choy
some sliced carrot
1 clove garlic, minced
2 slices ginger
1 egg
400ml chicken stock/water
some fried shallot & oil
salt & pepper to taste

Method
1. In a soup pot/skillet saut minced garlic and ginger with 1 tbsp shallot oil till aromatic
2. Add minced meat, loosen it with spatula and cooked through
3. Pour in chicken stock and bring to boil
4. Blanched bok choy and carrot for a minute, remove bok choy and set aside
5. Add abalones (include 50ml brine water), mee suah (quickly rinse with water) and bring to simmer
6. Loosen up the noodles and crack an egg in the center
7. Cooked for 30 seconds (or to your preference), turn off heat and remove to serving bowl
8. Top with veggies, ground pepper and fried shallot. Serve immediately

note
- marinate minced meat with light soy sauce, sesame oil, cooking wine, ginger juice, pepper and corn starch for 5-10 minutes

- if using water instead of chicken broth, season to taste with salt before adding egg in step 6

- egg or rice vermicelli noodles can be replace with mee suah
