Serves 3 persons as side dish
Okra is a Spring vegetable, extremely nutritious and quite versatile, thats why there are many recipes to follow with it.
In this rare recipe, I steam fresh okras and then prepare a simple Salad adding herbs and the delectable Ladolemono (oil-lemon) sauce. The salad can be served warm or at room temp. with a large variety of meats or chicken.
Let me show how to prepare this Spring Salad full with earthy flavours.
Suitable for vegans and fasting.

INGREDIENTS:
350 gr / 12 oz fresh Okras
30 ml / 2 tbsp. fresh Lemon Juice (1 & Lemon)
Lemon Zest from 1 lemon
70 ml / 4.5 tbsp. Extra Virgin Olive Oil
1 Garlic clove, minced
1 tsp. dry Basil
1.5 tbsp. Capers
bunch fresh Parsley, only the leaves, finely chopped
To garnish: 4-5 Lemon slices
Freshly Ground Salt and Pepper
