Vella poorna Kozhakattai / Kolukattai / Modak | Gayathiri's Cookbook

Kozhukattai is a South Indian steamed dumpling. The outer layer is made with rice flour.It can be stuffed with different ingredients.
Vella poorna kozhakattai is prepared with coconut and jaggery.

Ingredients:
Ghee- 2 teaspoons
Shredded coconut- 1/2 cup
Jaggery- 1/4 cup
Cardamom powder- 1/2 teaspoon
Water- 1.25 cups
Salt- 1/4 teaspoon
Rice flour- 1 cup

Directions:
1. Take ghee, shredded coconut,Jaggery and the cardamom powder in a pan. Stir often and cook the mixture on medium flame.
2. The jaggery will begin to melt first.Cook till the moisture from the jaggery begins to go away.switch off the flame.
3. Filling is ready. Keep it aside.
4. Boil 1.25 cups of water in a pan.Add salt and ghee.
5. Add 1 cup of rice flour to the boiled water.Quickly mix rice flour with the boiled water.
6. Cover the pan with the lid and keep it aside for 10 minutes.
7. When it is still warm enough, knead it to a smooth and soft dough.
8. Take a small portion of the dough, and flatten it with your fingers.
9. Place the jaggery coconut stuffing in the center of the dough.Bring all the corners together and close it.
10. Another method: Grease the mould with oil or ghee.Close the mould.
11. Press a small portion of the dough to cover the surfaces of the mould.
12. Place the coconut jaggery stuffing.
13. Cover with a small piece of dough on top.
14. Gently open the mould to remove the kozhakattai.
15. Steam them for 10 minutes on a medium flame.

Kozhakattai is ready!
