Vegetable stew:

This vegetable stew is a simple recipe which is traditionally served with appam and idiyappam or with jeera rice and lacy pancakes.. Coconut milk adds richness and flavor to this gravy.

Ingredients:
Coconut oil/ ghee- 2 teaspoon
Cinnamon- 1
Cardamom- 5
Cloves- 4
Black pepper- 1/2 teaspoon
Onion-1
Green chillies- 5
Ginger garlic paste- 1 teaspoon
Curry leaves- 2 sprigs
Peas- 1/2 cup
Carrots- 1/2 cup
Potatoes- 1.5 cups
Salt- 1/2 teaspoon
Shredded coconut- 2 cups

Directions:
1. To prepare coconut milk at home: Blend 2 cups of shredded coconut with 1 cup water.Squeeze out the thick coconut milk using cheesecloth or fine sieve.
2. Blend the coconut residue again with 1.5 cups of water.Squeeze out the second milk in a separate bowl.
3. Heat 2 teaspoon coconut oil/ ghee.Add cinnamon stick, cardamom, cloves and, black pepper. Saute for minute.
4. Then add onion, green chilliesGinger garlic paste and curry leaves.Saute for another minute.
5. Add peas, carrots and potato and the second extracted milk.
6. Close the lid and cook until the vegetables are soft.
7. Add salt.Once the vegetables are cooked, add the first extracted milk.
8. Stir well and keep it on low flame for a minute. Then switch off the flame.

Vegetable stew is ready!!
