Vegetable Pan Cake | Sooji Vegetable Chilla

INGREDIENTS
Cauliflower 4-5 florets
Baby carrots 4-5 or 1 medium size carrot
Capsicum ¼
Coriander leaves ¼ cup
Mint leaves ¼ cup
Green chilies per taste
Ginger ½ inch
Chopped Tomato ¼ cup
¾ cup Semolina
¼ cup yogurt
Salt to taste
¼ cup water
FOR TADKA
1 tsp oil
1 tsp Urad dal
1 tsp chana dal
1 tsp mustard seeds
1 tsp Cumin seeds
¼ tsp asafetida
8-10 Curry leaves

METHOD
1. Take all veggies except tomato and coarsely blend in food processer.
2. Take Semolina in a bowl, add yogurt, salt, water, chopped tomato, and veggie mixture to make thick batter.
3. Keep it aside for 5 mins.
4. Put a pan on medium heat,and add oil.
5. Once hot, add urad dal and chana dal and cook until brown.
6. Add cumin and mustard seeds until crackles.
7. Add asafetida and curry leaves and cook few secs.
8. Spread tadka in pan and add batter.
9. Flatten the batter with back of spatula.
10. Close the lid and cook for 10-15 mins.
11. Flip and cook 10-15 mins on other side.
12. Enjoy with mint and coriander chutney.
