Quinoa, lentil (Urad Dal), Vegetable Uttapam / Savory Pan Cake | Healthy Indian Twist

QUINOA, URAD DAL, VEGETABLE UTTAPAM
For 2-3 servings
Quinoa 1 cup
Urad dal ½ cup
Poha ½ cup
Fenugreek seeds 1 tsp
Salt to taste
Veggies of your choice. I used Tomato, onion, green chilies, bell pepper

METHOD

Wash rice, dal, poha and fenugreek seeds and soak for 4-5 hrs
After 4-5 hrs, grind everything with little or no water. Batter should be medium thick consistency.
Keep the batter overnight at warm place to ferment.
Batter should be double in size. Add salt and little water, if required to make medium thick batter.
Grease the pan (Optional). When little hot, make medium thin uttapam.
Add finely chopped veggies on the top and press gently.
Cook one side for 1-2 mins or until changes color on medium heat. Brush the oil (optional) and flip the uttapam. Cook on both the sides by flipping in between until cooked.
Tasty and healthy uttapam is ready.
