This simple vegan chocolate mousse only has three ingredients!Click here for the recipe:Aquafaba is the water that chickpeas are cooked in and the liquid that you find in a can of chickpeas. Vegan Chocolate Mousse6 small cups1 x 400 g / 14 oz can cooked chickpeas100 g dark chocolate3 tbsp maple syrupPlace a sieve over a mixing bowl. Pour the chickpeas into the sieve and let the aquafaba drip into the bowl. Save the chickpeas for dinner and measure up 1/2 cup/120 ml of the chickpea water/aquafaba. Beat it in the bowl with an electric mixer until soft peaks form. Melt the chocolate in a waterbath. Remove from heat, fold the maple syrup and aquafaba into the chocolate and keep on folding until everything is combined and smooth. Pour into small cups and place in the fridge for a few hours or until set.
