Thick & Fluffy Rolled Omelette! (厚蛋烧) | The Chinese Cuisine

These eggs and fluffy, soft, and flavorful!

INGREDIENTS (3-4 SERVINGS):
- 3 eggs
- chopped scallions
- 3 grape tomatoes
- black sesame seeds
- salt
- cooking oil

DIRECTIONS:
1. crack eggs in a bowl
2. chop scallions and dice tomatoes into small pieces
3. whisk eggs, scallions, tomatoes, black sesame seeds, and salt together until well mixed
4. add an even layer of olive oil on a heated pan on low/medium heat
5. pour a portion of eggs into pan
6. when the eggs have taken shape but are still liquid-y on the surface, roll it but leave out a little section
7. pour another round of egg into the pan and repeat until no egg is left
8. to seal the roll, pour a bit of leftover liquid egg on the edges
9. let the roll cook on low heat for several more minutes
10. divide into sections and enjoy!
