Chicken and Veggie Japchae (Stir-fried Glass Noodles)

Japchae is a popular Korean dish that is both healthy and easy to cook. Typically made with beef or pork but I decided to go with chicken which tastes just as delicious!

INGREDIENTS (4 servings):
- glass noodles (12oz)
- ~1.5 carrots
- 1 stalk green onion
- 1/2 yellow onion
- spinach/spring mix
- 1 shiitake mushroom
- 4 chicken tenders
- 1 egg
- soy sauce
- sugar
- oil
- cooking wine
- sesame oil
- salt
- ground black pepper
- garlic powder

DIRECTIONS:
1. soak glass noodles in water until soft
2. slice vegetables into thin strips
3. slice chicken and marinate in soy sauce, sugar, cooking wine, and salt
4. boil softened noodles for 5 minutes
5. boil spinach in salt water
6. cook beaten egg and slice into strips
7. add chicken strips to pan on medium heat
8. once the chicken is cooked on the outside slowly add in sliced vegetables and stir fry
9. add in boiled glass noodles, salt, ground black pepper, garlic powder, and soy sauce and stir fry
10. drizzle dish with sesame oil and top with cooked egg strips
11. serve and enjoy!
