The last artisan of the Sugar Lion , a vanishing trade in Singapore Sze Thye Cake Shop ()

Before he turned 12 years old, Mr Koh had begun his stint as a pastry apprentice. Now, at the age of 76, he is a master of his trade - a treasured heritage that is at high risk of vanishing in Singapore. He handmakes most of the goodies sold in his shop, such as peanut and sesame candies, tau sar piah, beh teh saw - all by himself.

Believed to be the last artisan locally, the veteran still makes or Sugar Lion in the traditional way using timber moulds. Sugar Lion, made with melted coloured sugar, were popular offerings in temples during festive seasons of Teochews and Hokkiens. Teochews use the Sugar Lion, in the form of sculpted lion figurine that signifies vigour and stregthen. Hokkiens use 3 or 5 sugar figurines (, ) comprising the Dragon, Phoenix, Lion, Elephant and Pagoda, that symbolise longevity and good luck.

Sugar Lions were originally made in white. However, it was not easy to control as sugar liquid caramelised and changed colour easily easily. Subsequently, the use of red became the trend as the colour was seen to be more auspicious and aesthetically pleasing.
