Serves 3-4 persons
There is one really Greek, much-loved Summery dish, called Gemista meaning: stuffed vegetables.
In this special, uncommon recipe the stuffing, instead of the traditional rice, is prepared with buckwheat plus herbs and vegetables.
These Gemista melt in your mouth, they are mellow, sweet and tender while at the same time offering a great alternative for those with a rice allergy or intolerance.
A meal ideal for the whole family, super food, super healthy!
Suitable for vegans and fasting.INGREDIENTS:
600 gr / 1 lb 5.5 oz / 6 pcs. Sweet Pointed Red Peppers
3-4 medium Potatoes, cut in wedges
cup / 90 gr. / 3 oz Buckwheat
2-3 medium Tomatoes, very ripe, washed
50 gr / 1.75 oz Carrots
2 tbsp. fresh Parsley
2 tbsp. fresh Mint (leaves only)
1 medium Onion, cubed
1 Garlic Clove
30 ml / 2 tbsp. Tomato paste (puree)
About 250 ml / 1 cup hot Water
1 tsp. Sugar
5 tbsp. / 75 ml Olive Oil
Ground Salt & Pepper
Optional: 60 gr / 2 oz cut in 6 blocks Feta Cheese (or substitute)
