These xi bing are soft, fluffy, and have the delicious aroma of sweet coconut milk and sesame seeds.INGREDIENTS (makes 8 xi bing BUT we only use half of the dough here!):- 700g all-purpose flour- 80g sugar- 10g yeast- 425 ml warm coconut milk (canned)- 1/2 tbsp. ghee- 2 eggs- sesame seedsDIRECTIONS:1. combine yeast, 50g sugar, warm coconut milk, ghee, and over half of the whisked egg (save some as egg wash). mix well2. gradually add in flour and mix until it forms a ball of dough3. let the dough rest until it rises to 2-3x its original size4. knead the dough and divide into half. we use half of the dough to make these xi bing; the other half we use to make cream filled bread cones (another video).5. divide the one half of dough into eight pieces6. knead each piece (a lot) so it rises and becomes soft and fluffy7. flatten each piece with a roller, cover and rest for 15 minutes8. brush with egg wash and sprinkle on roasted sesame seeds9. cook on medium heat until golden brown on each side (~3-4 minutes on each side)10. serve and enjoy!
