Soft and Fluffy Xi Bing (芝麻喜饼) | The Chinese Cuisine

These xi bing are soft, fluffy, and have the delicious aroma of sweet coconut milk and sesame seeds.

INGREDIENTS (makes 8 xi bing BUT we only use half of the dough here!):
- 700g all-purpose flour
- 80g sugar
- 10g yeast
- 425 ml warm coconut milk (canned)
- 1/2 tbsp. ghee
- 2 eggs
- sesame seeds

DIRECTIONS:
1. combine yeast, 50g sugar, warm coconut milk, ghee, and over half of the whisked egg (save some as egg wash). mix well
2. gradually add in flour and mix until it forms a ball of dough
3. let the dough rest until it rises to 2-3x its original size
4. knead the dough and divide into half. we use half of the dough to make these xi bing; the other half we use to make cream filled bread cones (another video).
5. divide the one half of dough into eight pieces
6. knead each piece (a lot) so it rises and becomes soft and fluffy
7. flatten each piece with a roller, cover and rest for 15 minutes
8. brush with egg wash and sprinkle on roasted sesame seeds
9. cook on medium heat until golden brown on each side (~3-4 minutes on each side)
10. serve and enjoy!
