Skillet Tuna Burgers (15 Minutes!)

Its Day 11 of my 15-minute Supper Series! Take the guesswork and stress out of weeknight dinners for you and your busy family.

My kids and I love a good burger, but sometimes you dont have ground meat or fresh fish on hand. Enter: these delicious, easy and budget-friendly tuna burgers!

Yup, just a few staple ingredients, a bowl, a skillet and youre good to go! We pair these with fruit salad or a garden salad. If were in a big rush, its raw veggies and hummus!

You can batch-cook these and store in the freezer (separated with wax or parchment paper) to warm up for lunches or fast leftovers. I often top a salad with a leftover tuna burger for my lunch!

What you need
3 cans chunk light or flaked light tuna, drained well
Wasabi Mayo (1/4 cup mayonnaise mixed with one teaspoon wasabi paste) * wasabi optional
1/2 cup panko bread crumbs
2 eggs, whisked
1 (or more) teaspoons garlic powder
sprinkle of lemon pepper
salt to taste
1 tbsp oil (I used a combo of olive oil and sesame oil)
Delicious fluffy buns

Steps:
Combine all ingredients in a medium-sized bowl, mixing thoroughly with a fork, then by hand.
Shape into burgers and place delicately on a plate. Heat oil in a large non-stick skillet over medium-high heat.
Cook burgers on both sides until golden brown, optionally melting cheese on top.
Serve on whole grain buns with wasabi mayo, lettuce, and tomatoes.
