Sesame Eggplant Salad (凉拌茄子) | The Chinese Cuisine

This creamy sesame eggplant combo is delicious and easy to cook!

INGREDIENTS:
- 3 eggplants
- dash of salt
- 1 tbsp. sesame paste
- 1 clove garlic

DIRECTIONS:
1. peel away the 'bad parts' of the eggplant
2. chop eggplant into sticks and soak in water for 15 minutes
3. remove eggplant from water and steam for 15 minutes
4. mix together sesame paste, salt, water, and minced garlic. slowly add in the water to thin it out
5. pour sesame dressing on top of eggplant and mix well
6. drizzle on some homemade hot chili oil
7. serve and enjoy!
