Chicken Szechuan is a sweet & spicy chicken stir fried that can be prepared dry or with gravy & is perfect for serving over rice or noodles. Boneless Chicken - 1 ib (Cut into small cubes)2. All Purpose Flour (Maida) - 3 tbsp3. Rice Flour - 1/2 tbsp4. Corn Flour/Corn Starch - 2 tbsp5. Black Pepper Powder - 1 tsp6. Salt 1/2 tbsp or as per taste7. Soy Sauce - 2 tbsp8. Vinegar - 1 tbsp9. Water - 1/2 cupIngredients for the Szechuan Gravy:1. Oil - 3-4 tbsp2. Garlic - finely chopped - 2 tbsp3. Ginger - finely chopped - 2 tbsp4. Onion - 1 Small - Diced5. Salt- 1/2 tsp6. Black Pepper Powder - 1 tsp7. Soy Sauce - 2 tbsp8. Vinegar - 1 tbsp9. Szechuan/Schezwan Sauce - 3 tbsp (Check out our recipe for homemade Szechuan/Schezwan Sauce below)10. Bell Pepper - 1 (Cut into cubes)11. Onion - 1 (Cut into cubes)12. Water - 1/2 Cup13. Corn Flour/Starch for Slurry - 2 tbsp14. Water for Corn Slurry - 1/4 Cup15. Sugar - 1/2 tsp16. Tomato Kethcup - 1 tbspMethod: Marination:1.Mix all the ingredients for chicken marination in a bowl and mix well to make a thick marinade paste2. Add boneless chicken to it and mix well and keep aside for 1 hour3. After chciken is marinated, heat oil in a pan and fry the chicken until it turns golden brown. Take out and kee aisde.Gravy:4. Heat oil in a pan and add garlic and ginger and fry until golden brown5. Add onions and fry for about a min6. Add salt, black pepper powder, soy sauce, vinegar, Szechuan/Schezwan Sauce 7. Add Bell peppers and onions and fry for a min8. Prepare Corn Slurry by adding the corn starch to water and mixing it well so no lumps are formed9. Add the corn slurry to gravy and cook on medium heat until gravy turns thick10. Add sugar and tomato ketchup 11. Add fried chicken and cook for 1-2 mins12.
