Schezwan Chicken | Hakka Szechuan Chicken | No Artificial Color or MSG | By KTT | Kashmiri Tadka Twist

Szechuan chicken is a very popular dish featuring in menus of almost all Indo-Chinese restaurants. It originated from Sichuan (hence the name), a province in China. Chicken Szechuan is a sweet & spicy chicken stir fried that can be prepared dry or with gravy & is perfect for serving over rice or noodles. Our recipe does not contain any artificial food coloring or MSG. Enjoy!

Ingredients for Chicken Marination:

1. Boneless Chicken - 1 ib (Cut into small cubes)
2. All Purpose Flour (Maida) - 3 tbsp
3. Rice Flour - 1/2 tbsp
4. Corn Flour/Corn Starch - 2 tbsp
5. Black Pepper Powder - 1 tsp
6. Salt 1/2 tbsp or as per taste
7. Soy Sauce - 2 tbsp
8. Vinegar - 1 tbsp
9. Water - 1/2 cup


Ingredients for the Szechuan Gravy:

1. Oil - 3-4 tbsp
2. Garlic - finely chopped - 2 tbsp
3. Ginger - finely chopped - 2 tbsp
4. Onion - 1 Small - Diced
5. Salt- 1/2 tsp
6. Black Pepper Powder - 1 tsp
7. Soy Sauce - 2 tbsp
8. Vinegar - 1 tbsp
9. Szechuan/Schezwan Sauce - 3 tbsp (Check out our recipe for homemade Szechuan/Schezwan Sauce below)
10. Bell Pepper - 1 (Cut into cubes)
11. Onion - 1 (Cut into cubes)
12. Water - 1/2 Cup
13. Corn Flour/Starch for Slurry - 2 tbsp
14. Water for Corn Slurry - 1/4 Cup
15. Sugar - 1/2 tsp
16. Tomato Kethcup - 1 tbsp


Method:

Marination:

1.Mix all the ingredients for chicken marination in a bowl and mix well to make a thick marinade paste
2. Add boneless chicken to it and mix well and keep aside for 1 hour
3. After chciken is marinated, heat oil in a pan and fry the chicken until it turns golden brown. Take out and kee aisde.

Gravy:

4. Heat oil in a pan and add garlic and ginger and fry until golden brown
5. Add onions and fry for about a min
6. Add salt, black pepper powder, soy sauce, vinegar, Szechuan/Schezwan Sauce
7. Add Bell peppers and onions and fry for a min
8. Prepare Corn Slurry by adding the corn starch to water and mixing it well so no lumps are formed
9. Add the corn slurry to gravy and cook on medium heat until gravy turns thick
10. Add sugar and tomato ketchup
11. Add fried chicken and cook for 1-2 mins
12. Szechuan/Schezwan Chicken is Ready!
