Growing up I always looked forward to meatloaf night.The only problem was that my mothers version of meatloaf was ground beef, mixed with breadcrumbs and not much else. It was bland, but as a kid if I used enough ketchup, I loved it.But now as an adult, I realize that meatloaf can and should be so much more.So I decided to revisit the meatloaf of my mother and make it mine. About the only thing that I kept from her old recipe is the ground beef. But I replaced the usual ground beef with 100% pastured ground beef from my friends at KOL Foods.
