Serves 5-6 persons as side dish
Brussels Sprouts Salad has always been a classic side dish at the Christmas table. Brussel Sprouts are a superfood, full with nutrients. But if you're struggling toenjoytheir taste, then this Salad will be your answer.
Its my own variation to the classic Brussel Sprouts Salad, by adding some ingredients and give it some out-of-the-box appealing Greek touch!
Scrumptious, easy to make and nutritious, it makes the perfect side dish for your turkey dish but also for any meal, any time of the year! Lets find out how to prepare it together.
Suitable for lacto vegetarians.
Note: For fasting or Vegans, use a feta cheese substitute. Vegans can use agave or maple syrup instead of honey.

INGREDIENTS:
Ingredients for the Salad:
350 gr / 12 oz Fresh Brussel Sprouts
60 gr / 2.1 oz Fresh Baby Spinach, washed
30 gr / 1 oz Fresh Rocket, washed
30 gr / 1 oz Pistachios, roasted and salted
50 gr / 1.75 oz Greek Feta Cheese, crumbled (or substitute)
50 gr / 1.75 oz Sundried Tomatoes, cut in strips
Optional: 1 small, sweet Onion, cut in thin wedges
Ground Salt and Pepper
Mixture of: 15 ml / 1 tbsp. Balsamic Vinegar & 15 ml/1 tbsp. Olive Oil
Ingredients for the Vinaigrette sauce:
50 ml. / 3.3 tbsp. extra virgin Olive Oil (EVOO)
15 ml / 1 tbsp. Balsamic Vinegar
About 20 ml. / 1-2 tbsp. Greek Thyme Honey
About 30 ml / 2 tbsp. Water
1/3 tsp. Ground Salt
Ground Pepper
