Red rice Puttu/Rice flour puttu/Kerala putti | Gayathiri's Cookbook

Red rice puttu:
Puttu is made by steaming roasted rice flour and fresh coconut in a cylindrical metal vessel. It can be made in steamer or in bamboo logs as well.

In Kerala, it is served with either kadala curry, or green gram curry along with papadam and banana. In tamilnadu, it is served with grated coconut with jaggery made of palm or sugar cane, or with sweetened coconut milk.

Ingredients:
Red rice flour- 1 cup
Salt- 1/2 teaspoon
Shredded coconut- 3/4 cup

Directions:
1. Roast rice flour for 5 minutes on low flame. Then take it in a bowl
2. Add 1/2 teaspoon salt and mix well.
3. Sprinkle water little by little to get breadcrumbs consistency.
4. Right consistency: When you press little flour in your fist, it should form a shape.
5. Insert the circular hole disc to the bottom of the cylindrical tube.
6. Fill1/3 of the tube with grated coconut.Then add the prepared rice flour till half
7. Fill up 2 tablespoons of grated coconut.Fill the rest of the tube with more prepared rice.Sprinkle some grated coconut on top.Cover the cylindrical tube.
8. Fill your cooker or puttu kudos with water till two thirds full. Close the lid.
9. Place the cylinder tube on the cooker spout once the steam starts to come out.
10. Steam for 6-8 minutes or until steam comes out off the holes on the lid.
11. Remove the tube from the pot and open the lid.Slowly push the disc, slide it into a plate.

Puttu is ready!!
