This is a very traditional tamilnadu brahmin sambar.This is very easy to prepare and does not require readymade sambar powder.This sambar is made with tamarind, toordal, coconut and spices.Ingredients:Toordal- 1/2 cupTamarind juice- 2.5 cupsRed radish- 6Turmeric powder- 1/2 tspSalt- As neededHing- A pinchCoriander seeds- 1.5 tspFenugreek seeds- 1 tspChannadal- 1 tspRed chillies- 5Shredded coconut- 1 cupOil- 2 tspCurry leaves- For garnishingDirections:1. Soak tamarind in hot water for 15 minutes and extract the juice.2.Pressure cook half cup of toordal for upto 4 whistles.3.Roast coriander seeds, fenugreek seeds, channadal and red chillies in little oil til they turn golden brown.4.Grind the roasted ingredients and a cup of coconut into a fine paste.5. Take 2.5 cups of the tamarind juice in a vessel.Add turmeric powder , salt, hing and radish to the tamarind juice.6. Boil for 15 minutes or until the radishes are cooked.7. Add the ground coconut paste. Let it boil for 2-3 minutes.8.Now add the mashed toor dal and adjust the sambar consistency by adding water to it.Boil for another 3-4 minutes.9.For seasoning: Heat 2 tsp oil . Add mustard seeds. When it starts to crackle, add curry leaves and saute for a minute.10.
