Stay fit, Stay healthy!Quinoa and Spinach Uttapam For 2-3 servingsQuinoa 1 cup Urad dal ½ cup Poha ½ cup Fenugreek seeds 1 tspSalt to taste 1 cup spinach pureeVeggies of your choice. I used Tomato, onion, green chilies, bell pepperMethod:Wash rice, dal, poha and fenugreek seeds and soak for 4-5 hrsAfter 4-5 hrs, grind everything with little or no water. Batter should be medium thick consistency.Keep the batter overnight at warm place to ferment. Batter should be double in size. Add salt and spinach puree. Mix well. Grease the pan. When little hot, make medium thin uttapam. Add finely chopped veggies on the top and press gently. Cook one side for 1 min or until changes color on medium heat. Grease and flip the uttapam.
