Quick Tomato Thokku- Pressure cooker method

Tomato thokku is a favorite side dish of all in my family. It goes well with all Indian tiffin varieties like Idly, dosa, Upma etc. It can be served with Rice varieties and parathas too. You can also use it as a spread on toasted bread, my husband loves it.

I make it very often in authentic method. But it usually takes more than 30 minutes to make it perfect and spills all over the kitchen. To avoid this cleaning headache, I found this non-spill method to do it. It saves lot of cooking/cleaning time.

The below recipe will serve for weeks, based on your taste buds!! My family empties in a week.

Ingredients:
Tomatoes-1 KG
Sesame oil- 6 tablespoons (minimum)
Turmeric powder- 1 teaspoon
Salt-1.5 teaspoon ( adjust according to your taste)
Mustard powder-1 teaspoon
Fenugreek powder-1 teaspoon
Red chilly powder-3 teaspoons(adjust according to your spice level)
Mustard seeds- 1 teaspoon
Hing-1/4 teaspoon
Red chillies-2
Curry leaves- 1 sprig


Directions:
1. Keep pressure cooker on medium flame.Add 3 tablespoons oil first to cover the bottom.
2. Then add tomatoes, turmeric powder, salt, mustard powder, fenugreek powder and red chilly powder.(do not mix it- spices will stick to the bottom).
3. Close the lid and keep it on medium flame for 25 minutes.
4. Once the pressure settles down, open the lid and mash it.
5. Keep it on high flame for 5 minutes or until you get thick consistency.
6. Heat 3 tbsp sesame oil in a separate pan. Add mustard seeds, hing, red chillies and curry leaves. Switch off the flame once the mustard seeds are spluttered.
7. Add this tadka to tomato thokku.

Spicy tomato thokku is ready!!!
