Pumpkin Risotto Recipe - How To Make Risotto

The wine we used: 2018 Scarpetta Pinot Grigio, Friuli, Italy https://www.scarpettawine.com/

Ingredients:
4 to 5 cups chicken or vegetable stock or broth
1 tablespoon extra virgin olive oil
1 tablespoon unsalted butter
2 shallots, peeled and finely chopped
2 large clove garlic, minced
1 cup arborio rice
1 cup dry white wine (This Pinot Grigio works well: 2018 Scarpetta Pinot Grigio, Friuli, Italy)
½ teaspoon salt
⅛ teaspoon nutmeg
2 tablespoons chopped fresh sage
1 cup pumpkin puree
¾ cup Parmigiano Reggiano cheese, grated
Freshly ground black pepper to taste
Extra virgin olive oil, to finish

Method
1. Heat the stock to a simmer, and continue simmering it while preparing the recipe.
2. Heat a large pan over medium heat. Add oil and butter.
3. Sauté shallot and garlic until the onion begins to soften.
4. Stir in rice to coat well; add wine, salt and cook until wine has half evaporated.
5. Add 1 cup of the stock with the nutmeg and sage to the rice; reduce heat to low so that mixture simmers. Stir often, cooking until most of the liquid has been absorbed by the rice. Repeat with another cup of stock, and continue stirring, adding stock until the rice is almost tender but still has some bite to it.
6. Stir in the pumpkin, cheese, and pepper, and stir until mixture is hot.
7. Serve in shallow bowls, top with additional cheese and a drizzle of olive oil
