PUMPKIN KHEER

Ingredients

500 grams red pumpkin, peeled and cut into 1 inch pieces
2 tbsps ghee
3 cups milk
A few saffron strands + for garnish
½ tsp green cardamom powder + for garnish
¾ cup grain sugar
Roasted almonds slivers for garnish
Blanched and slivered pistachios for garnish

Method

1. Heat ghee in a nonstick pan, add pumpkin and sauté for 2-3 minutes. Add milk and cook until the pumpkin is completely cooked.
2. Mash the pumpkin and add saffron, green cardamom powder and sugar, mix and cook until the sugar dissolves.
3. Serve hot garnished with green cardamom powder, almonds, pistachios and saffron strands
