Pressure Cooked Blonde Chicken Stock | ChefSteps

This golden delicious chicken stock is extremely versatile and ridiculously easy to make. Cook large batches at once and keep them in your freezer. Then, season to make broth, or reduce to make sauce, consume, jus, or demi-glace. http://www.chefsteps.com/activities/pressure-cooked-blonde-chicken-stock

With a pressure cooker, you can make stock in about half the time as in a regular pot, but this recipe works for both (for a regular pot, just cook it for a few hours instead of 45 minutes). It's a great way to use chicken bones or carcasses that you would otherwise discard.

At ChefSteps, we don't tell you how to cook, we show you—with recipes designed to inspire and educate, tested techniques for successful results at home, and a lively forum where you'll chat with other chefs and home-cooking enthusiasts.
