Pork Tenderloin is one of the juiciest, leanest and most tender (hence its name) of pork meats. In Greek it is called Psaro-nefri which for those who dont know bizarrely, it seems like it means: Fish-Kidney!!
The Greek language is extremely rich, so the etymology of the word comes from: a. 1st word is the ancient Psoai (and not psari), meaning lumbar muscles and b. 2nd word really means kidney, because this meat surrounds the porks kidneys.
A very easy recipe to prepare since the oven does all the work.
And the result? I think I will let the pictures speak for themselves.

INGREDIENTS:
Ingredients for the pork and veggies:
800 gr / 1 lb 11.75 oz / 2 pieces Pork Tenderloin (boneless) @ room temp.
1.25 kg / 2 lb 12 oz Potato Wedges, thin
180 gr / 6.3 oz Small Carrots, cut in rounds
1 large Onion, in slices
100 gr / 3.5 oz / 2-3 stalks Celery, cut in rounds

Ingredients for the marinade:
75 ml / 5 tbsp. Olive Oil
60 ml / 4 tbsp. Balsamic Vinegar
45 ml / 3 tbsp. Honey
1 tbsp. fresh Rosemary, chopped
Ground Salt and Pepper
