Peerkangai/Beerakaya is one of my favorite vegetable.This thogayal is absolutely delicious . It is usually served with hot steamed rice but is also an excellent accompaniment for dosas and idlies.Ingredients:Peerkangai- 3Tamarind- A small pieceCoconut- 1/4 cupHing- A pinchSalt- As neededUraddal- 2 tbspGreen chillies- 4Turmeric powder- 1/2 tspDirections:1. Peel the peerkangai skin and cut into small pieces.2. Roast 2 tbsp uraddal and 4 green chillies in little oil.when the dal turn golden brown add tamarind saute for 30 seconds then switch off the heat.3. Saute peerkangai with turmeric powder and salt.
