Bhaji is a popular North Indian gravy.It's a spicy curry of mixed vegetables cooked in a special blend of spices. It is usually served with soft buttered pav.Ingredients:Potatoes- 3 or 4Carrots-2Peas- 1/2 cupBeans- 20Turmeric powder- 1/2 tspSalt- As neededJeera- 1 tspGinger- 1 small pieceGarlic- 1 cloveGreen chillies- 2onion-2Tomatoes- 3Pav bhajji masala powder- 1.5 tspGaram masala powder- 1 tspRed chilli powder- 1 tspDirections:1. Pressure cook potatoes, carrots and peas for upto 2 whistles.Then mash it well.2.Heat 2 tsp oil in a pan. Add jeera. When it starts to crackle, add ginger garlic and green chillies and saute for a minute.3. Add onion and cook until translucent.4.Now add tomatoes and cook until soft.5.Then add turmeric powder, salt, red chilli powder, garam masala powder and pav bhaji powder. Cook until the raw smell of the powders goes away.6.Add a cup of water, mix it well and garnish with coriander leaves.7.
