Pav bhaji masala | Gayathiri's Cookbook

Bhaji is a popular North Indian gravy.It's a spicy curry of mixed vegetables cooked in a special blend of spices. It is usually served with soft buttered pav.

Ingredients:
Potatoes- 3 or 4
Carrots-2
Peas- 1/2 cup
Beans- 20
Turmeric powder- 1/2 tsp
Salt- As needed
Jeera- 1 tsp
Ginger- 1 small piece
Garlic- 1 clove
Green chillies- 2
onion-2
Tomatoes- 3
Pav bhajji masala powder- 1.5 tsp
Garam masala powder- 1 tsp
Red chilli powder- 1 tsp

Directions:
1. Pressure cook potatoes, carrots and peas for upto 2 whistles.Then mash it well.
2.Heat 2 tsp oil in a pan. Add jeera. When it starts to crackle, add ginger garlic and green chillies and saute for a minute.
3. Add onion and cook until translucent.
4.Now add tomatoes and cook until soft.
5.Then add turmeric powder, salt, red chilli powder, garam masala powder and pav bhaji powder. Cook until the raw smell of the powders goes away.
6.Add a cup of water, mix it well and garnish with coriander leaves.
7. Toast the pav with ghee/butter.Serve it with bhaji.
