Oden | Graces Japanese Cooking

ODEN is a winter Japanese comfort food with ingredients such as daikon, konnyaku, hard-boiled eggs, fish cakes simmered in a light soy based dashi or broth and served in a ceramic pot. Once the flavors are absorbed, the pot is moved to the table where it is served with some Japanese karashi (mustard) or yuzu kosho. Oh my. So warming. So delicious. So nourishing. Perfect for this time of year. I hope you enjoy:)

Recipe(serves 3)

Dashi:
8 cups water
2”x2” kombu for dashi
30g katsuobushi (bonito flakes)
3 tablespoons soy sauce
3 tablespoons mirin
2 teaspoon cane sugar
pinch of salt

Oden Ingredients:
3 eggs
1/2 large daikon
I package konnyaku
5 oz hanpen (fish cake)
2-3 chikuwa (tube shaped fish cake)

1. Make dashi. See video.
2. Boil eggs and remove shell.
3. Quick boil konnyaku for 2-3 minutes to remove impurities. Drain andcut into triangles.
4. Peel daikon. Cut into 1/2 inch rounds. Trim the edge. This will prevent daikon from falling apart and better absorb flavors.
5. Cut hanpen into eight equal triangles.
6. Cut chikuwa jn half diagonally.
7. Bring dashi to a boil and add all ingredients except for the hanpen.
8. Cover and simmer on low until daikon is cooked through.
9. Turn off heat and add the hanpen.
10. Leave covered for at least half a day or overnight so that the flavors are well absorbed.
11. Reheat, serve individually, and enjoy with karashi (Japanese mustard).
