Serves 2-3 persons
Red mullet (called barbouni in Greek) is the fish that characterizes the beautiful Aegean Sea and the most popular medium-size fish in Greece. It is considered a delicacy, has a high commercial value and is one of the most expensive fish.
The freshest mullets can be found of course on the Greek Aegean islands. Thats why they have a large variety of delicious dishes with mullets.
This one comes from Mykonos and it combines fresh mullet fillets fried to perfection so that they will turn really crispy and while piping hot, they are topped with warm, garlicky homemade tomato sauce! Do I need to describe more?
Suitable for pescatarians.

INGREDIENTS:
Ingredients for the Tomato Sauce:
500 gr / 1lb 2oz Fresh, very ripe Tomatoes, washed
About 2 tbsp. / 25 ml Olive Oil
1 tbsp. / 15 ml Tomato paste (puree)
tbsp. dry Oregano
1 small Onion (or medium)
2-3 Garlic Cloves
tsp. Paprika powder
1 tsp. Sugar
bunch fresh Parsley
Ground Salt and Pepper

Ingredients for the fried Mullets:
350-400 gr /12-14 oz Fresh Red Mullet Fillets cut in 2 strips, weighed cleaned
cup / 65 gr / 2.3 oz All-purpose Flour
1 tsp. good quality Sea Salt
tsp. Ground Pepper
1 lt. / 4 cups Corn or other Vegetable Oil for frying
