Drumstick leaves/Moringa leaves are rich in many important nutrients, including protein, vitamin B6, vitamin C, riboflavin and iron.You can make Subzi with these leaves or can add it to dosa or adai varieties .Ingredients:Parboiled rice- 2 cupsUraddal- 2 tspSalt- As neededShredded coconut- 1 cupDrumstick leaves- 2 cupsOnion-2Oil- As neededDirections:1. Soak 2 cups of parboiled rice and 2 tsp of uraddal for 4 hours. Grind this into a fine paste and add salt. Mix it well. Let it ferment for 8 hours minimum.2. Heat a taw over medium flame. Spread the batter .Top with coconut, onion and drumstick leaves.Apply oil around the edges.3.When the edges turns little brown in color, flip the dosa and cook for 2 more.minutes.
