Craving a light yet wholesome meal - try this mixed vegetable and pasta soup with crispy pesto garlic bread.

MIXED VEGETABLE AND PASTA SOUP

Ingredients

1 medium onion, cut into small pieces
½ medium yellow squash, cut into small cubes
¼ medium green zucchini, cut into small cubes
1 medium carrot, cut into small cubes
1 medium potato, cut into small cubes
2 tablespoons macaroni
2 teaspoons olive oil
½ tablespoon chopped garlic
3 cups vegetable stock
Salt to taste
2-3 tablespoons boiled and chopped tomatoes
¼ medium broccoli, cut into small florets
4-5 French beans, chopped
1 inch stalk of leek, roughly chopped
¼ medium cabbage, roughly chopped
Pesto for drizzling
Grated parmesan cheese for garnishing

Method

1. Heat olive oil in a deep non-stick pan. Add garlic and sauté for 30 seconds. Add onions, yellow squash, green zucchini and carrot cubes and sauté for 30 seconds.
2. Add macaroni and sauté for 30 seconds. Add vegetable stock, mix and cook for 2 minutes.
3. Add potato cubes and mix. Add salt and tomatoes, mix and cook for 5-7 minutes.
4. Add broccoli florets, French beans, leek and cabbage and mix. Add remaining vegetable stock and cook for 3-4 minutes.
5. Drizzle some pesto on top. Garnish some grated parmesan cheese and serve hot with pesto bread.


PESTO BREAD

Ingredients

8 French bread slices
¾ cup basil leaves
5-6 black peppercorns
Salt to taste
1 tablespoon pinenuts
2 tablespoons parmesan cheese
2-3 garlic cloves
¼ cup + 2 tablespoons olive oil

Method

1. Preheat oven to 180̊ C.
2. To prepare pesto, grind together peppercorns, salt, pinenuts and grated parmesan cheese into a fine powder.
3. Add garlic cloves to the grinder and grind. Add basil leaves and ¼ cup olive oil and coarsely grind again. Transfer in a bowl and drizzle remaining olive oil on top.
4. Place bread slices on a baking tray. Put the tray into the preheated oven and bake for 5-7 minutes.
5. Spread some pesto on each baked bread slice.
6. Serve hot with mixed vegetable and pasta soup.
