Scoopable Christmas Cake
Ingredients(Makes 1)
1 store-bought sponge cake
200ml heavy cream
15g sugar
vanilla extract
canned fruit
strawberries
1Tbsp strawberry jam
1tsp gomme syrup

Directions
1. In a microwave-safe dish, combine the strawberry jam and syrup then microwave (600w) for 30 seconds to make a nappage.
2. Slice the cake into thirds horizontally.
3. Drain the canned fruit.
4. Combine the heavy cream, granulated sugar, and vanilla extract, and beat until soft peaks form.
5. Put 1 layer of 2 into a container, spread on 4, arrange fruit on top, then add more of 4.
6. Add a layer of 2, spread on 4, arrange fruit on top, add more of 4, then top with 2.
7. Decorate the top with 4 and strawberries, then brush 1 on the strawberries.
