Ingredients(Serves 1)
1/5 pumpkin
100 g cream cheese
salt
pepper
red cabbage
mizuna
40ml balsamic vinegar
sprouts
1 cherry tomato

Directions
1. Wrap the pumpkin in plastic wrap and cook it in the microwave (600w) for 4 minutes, then cut it into chunks, and peel it.
2. Mash 1 in a bowl, then add cream cheese, salt, and pepper, and mix well.
3. Fill a ring mold with 2, and chill it in the fridge for 15 minutes.
4. Shred the red cabbage, sprinkle with salt, roughly chop the mizuna, combine and toss.
5. In a pot, simmer and reduce the balsamic vinegar until has thickened.
6. Heat oil (not listed) in a frying pan, and cook 3.
7. Plate 6 on a serving dish, then garnish with 4, sprouts, and cherry tomato pieces.
8. Drizzle 5 around the galette.
