Mint Rice/ Pudhina satham | Gayathiri's Cookbook

Mint is a popular herb and a well-known mouth freshener that has been used for hundreds of years for its medicinal properties.It can be used in many culinary preparations in its fresh or dried form.
I have made this mint rice in a very simple way without using too many ingredients and it turned out delicious.
It's a very simple recipe.Try it out!

Ingredients:
Basmati rice- 1 cup
Mint - 20 leaves
Onion-1
Green chillies- 4
Bay leaves- 1
cinnamon stick 1
Fennel seeds- 1 tsp
Coconut- 1/4 cup
Ginger garlic paste- 1/2 tsp
Jeera- 1 tsp
Salt- as needed

Directions:
1.Cook 1 cup basmati rice. Keep it ready.
2. Grind mint leaves, green chillies, jeera, ginger garlic paste and coconut with little water into a fine paste.
3.Heat 2 tsp oil. Add cinnamon stick, bay leaf and fennel seeds and onion. Saute until onion is translucent.
4. Then add the ground mint paste and salt and cook until the raw smell of the mint goes away.
5.Now add the cooked rice and mix gently.
Mint rice is ready!!
