METHIWALI ARHAR KI DAL

Ingredients

1 cup split pigeon peas (arhar dal/toor dal), soaked for 2-3 hours and drained
½ medium bunch fresh fenugreek leaves (methi), finely chopped
Salt to taste
¼ teaspoon turmeric powder
1 teaspoon jaggery
½ teaspoon red chilli powder
1 tablespoon ghee
1 tablespoon chopped garlic
¼ teaspoon asafoetida

Method

1. Pressure cook split pigeon peas alongwith salt and turmeric powder in 3 cups water till 3-4 whistles are released. Open the lid when the excess pressure is completely released.
2. Add jaggery, chilli powder and ½ cup water to the cooked pigeon peas mixture. Place it back on heat and cook till the mixture boils. Whisk to lightly mash.
3. Heat ghee in a non-stick. Add garlic and sauté till golden brown. Add asafoetida and sauté. Add fenugreek leaves and sauté for 1 minute.
4. Adjust salt, mix and cook for 1 minute. Add the cooked pigeon peas mixture, whisk and cook for 1-2 minutes.
5. Serve hot.
