Mediterranean salad with five grains Green Kitchen Stories

We have always loved food that looks as good as it tastes. This mediterranean salad is a real thing of beauty with a mix of colours, textures and seasonal ingredients. We have created this dish around a mixture of five different organic, healthy whole grains that add sustenance and make it a perfect dinner salad. The cooked grains are combined with pesto and then topped with oven roasted sunchoke slices and creamy mozzarella that melts on the tongue. Just before serving, we arrange beautiful slices of thinly shaved polka beets, radishes and red grapes, which give the salad a touch of crunch and sweetness.
