Mango Themed Cake

This super moist 2 layer cake is filled with real mangoes (not the pulp) and (mango puree mixed)whipping cream to bring out the real flavors of mangoes. This is an eggless cake and is made without butter and condensed milk.

Alphonso mangoes are the most flavorful which is perfect for making this cake.

Ingredients:

Yogurt-1/2 cup
Sugar-1/2 cup
Baking powder-1 teaspoon
Baking soda- 1/2 teaspoon
All purpose flour/Maida- 1 cup
Salt-1/4 teaspoon
Oil-1/2 cup
Mango essence-1/2 teaspoon
Mango puree- 3 tablespoons
Alphonso Mangoes-4
Whipping cream-As needed (quantity depends on the decorations)
Sugar/Corn syrup- 4 tablespoons

Directions:
1. Take 1/2 cup Yogurt and 1/2 cup Sugar in a bowl. Whisk until sugar gets dissolved . Add 1/2 tsp baking powder, 1/2 tsp baking soda. Mix it well and keep it aside for 5 minutes.
2. You will get a frothy mixture after 5 minutes. Add 1/2 cup oil little at a time and whisk continuously to emulsify the oil with the curd.
3. Add 1/2 tsp mango essence.
4. Sift 1 cup all purpose flour & 1/4 tsp salt into the curd mixture.
5. Whisk gently till you get a smooth batter.
6. Pour the batter into a cake pan and bake at 350 degrees Fahrenheit for 32-35 minutes or until a toothpick inserted comes out clean.

Eggless cake is ready!!

Decorations:

1. Let the cake cool down completely. Cut it into half.
2. Mix 3 tablespoons of mango puree with 3/4 cup of whipping cream. This whipping cream can be used to fill the cake along with mango pieces but shouldn’t be used to cover the outer layer.
3. Drizzle warm sugar/corn syrup on the bottom layer cake.
4. Spread the whipping cream(mango puree mixed) . Place the cut mango pieces. Cover the mango pieces with the whipping cream again(mango puree mixed ).
5. Place the top layer and drizzle sugar syrup on top.
6. Spread 2 coats of frosting.Refrigerate after 1st coat for an hour. Then spread the second coat(with regular whipping cream)
7. Design the cake with a piping bag.Use Wilton tip 16 to make star designs.
8. Use Wilton 349 tip to make leaf designs.
9. Scoop mango using a spoon.Place the scooped mango pieces on top to finish the cake.
