This laddu paruppu thengai is made of besan flour and sugar.Ingredients:Besan flour- 2 cupsRice flour- 2 tbspBaking soda- 2 tspSalt- A pinchKesari yellow color- A pinchSugar- 5 cupsKalkandu/Rock candy- 1/4 cup(optional)Cardamom powder- 1/2 tspcashews- For garnishingRaisins- For garnishingDirections:1. Take gram flour, rice flour, a pinch of salt, baking soda and yellow color in a bowl.Mix it well without any lumps.2.Add water slowly to form a dosa batter consistency.3.Roast some cashews and raisins in 2 tsp ghee. Keep it aside.4.Take 4 cups sugar with 1 cup water.Boil until it reaches half-string consistency.Add cardamom powder and switch off the heat.5.Heat oil in a kadai. Keep the jahrni on top of the oil at a decent distance.Pour a ladle of batter and spread it with the spatula.6.Fry the bonds until the bubbles begin to reduce.Do not fry it until it is crunchy. Drain the boondhi and put them in sugar syrup directly.Keep the sugar syrup on a very low heat until all the boondhis are done.7.Repeat the process until the batter is over.Mash the boondhis using a spatula. Add cashews, raisins and sugar candy(kalkandu).8. Stuff the koodu with the hot boondhi and pack it tightly.
