Furthermore, the crunchy and juicy texture of tindora make this vegetable is an excellent source of fiber.This Tindora curry is a delicious South Indian dry curry by stir frying thinly sliced tindora tempered with seasonings.Ingredients:Tindora/Kovaikai- 1.5 lbsOil- 2 tbspMustard seeds- 1/2 tspChannadal- 1 TspUraddal- 1 TspPeanuts- 1 CupTurmeric powder- 1/2 TspSalt- As neededRed chilli powder-- 1 tspDirections:1. Heat 2 tsp oil in a kadai. Add mustard seeds. When it starts to crackle, add channel, uradda,cuury leavesl and peanuts . Fry until dal turns golden brown.2.When dal turns golden brown add tindora, turmeric powder and salt.Close the lid and cook until the vegetables are soft.3.Add red chilli powder and oil.
