Kovakkai curry/Tindora Curry/Dondakaya curry | Gayathiri's Cookbook

Tindora is loaded with several types of vitamins and minerals. Furthermore, the crunchy and juicy texture of tindora make this vegetable is an excellent source of fiber.This Tindora curry is a delicious South Indian dry curry by stir frying thinly sliced tindora tempered with seasonings.

Ingredients:
Tindora/Kovaikai- 1.5 lbs
Oil- 2 tbsp
Mustard seeds- 1/2 tsp
Channadal- 1 Tsp
Uraddal- 1 Tsp
Peanuts- 1 Cup
Turmeric powder- 1/2 Tsp
Salt- As needed
Red chilli powder-- 1 tsp

Directions:
1. Heat 2 tsp oil in a kadai. Add mustard seeds. When it starts to crackle, add channel, uradda,cuury leavesl and peanuts . Fry until dal turns golden brown.
2.When dal turns golden brown add tindora, turmeric powder and salt.
Close the lid and cook until the vegetables are soft.
3.Add red chilli powder and oil. Roast the vegetables for 8-10 minutes over medium flame.(without closing the lid).

Tindora curry is ready!!
