Kesari/Rava Kesari/Sooji Kesari/Kesaribath/ Semolina pudding | Gayathiri's Cookbook

Rava Kesari is a popular South Indian recipe prepared for all occasions. This is also one of the quick fix recipe when you have unexpected guests at home. Its an easy dessert to make it in less time.

This is a fool proof recipe. So try it at home and surprise your loved ones.


Ingredients:

Sooji/Rava- 1/4 cup
Sugar- 3/4 cup
Water- 1 cup
Ghee- 2 tbsp
Cashews- 6
Yellow/Orange color- A pinch


Directions:

1. Roast cashews in 1 tablespoon ghee till golden brown.Keep it aside.
2. Roast 1/4 cup shoji in 1 tbsp ghee for 2 minutes in medium flame. Do not over roast it.
3. Add 3/4 cup sugar.Mix it well. Add 1 cup of water immedialtely. Increase or decrease the amount of sugar according to your taste buds.
4. Add a pinch of yellow or orange color.
5. Let it boil till the sooji is cooked well.
6. When it leaves the sides of the pan, add roasted cashews and then switch off the flame.
