Keerai paruppu kadaisal/Spinach dal | Gayathiri's Cookbook

Keerai paruppu kadaisal/Spinachdal is a simple yellow dal made with
mild spices, toordal and spinach. You can serve it as a soup or as a side dish for rice/roti.

Ingredients:

Spinach- 3 cups
Oil- 2 tbsp
Mustard seeds- 1/2 tsp
Jeera- 1 tsp
Green chillies- 2
Garlic cloves- 3
Onion-1
Red chilli powder- 1 tsp
Toordal- 3/4 cup
Hing- A pinch

Recipe:
1. Pressure cook 3/4 cup toordal or moongdal for upto 4 whistles with 1/2 tsp turmeric powder and salt. Keep it aside.

2.Heat 2 tbsp oil or ghee.Add 1/2 tsp mustard seeds,1 tsp jeera, 2 green chillies and 3 garlic cloves. Saute for a minute.

3. Add and saute onion until translucent.Add 1 tsp red chilli powder and saute for a minute.

4.Add the cooked toordal. Let it cook for 3 minutes.Then add a pinch of hing and 3 cups spinach.cook until the spinach has wilted.

5.Add 1 tsp ghee and switch off the heat.

You can serve it as a soup or as a side dish for rice and roti.
