Kashmiri Firni | Phirni | Semolina Pudding | By KTT | Kashmiri Tadka Twist

Phirni or Firni or PHIREEN (as called locally) is a traditional Kashmiri dessert made with sooji (semolina) & milk as main ingredients. A lot of dry fruits like almonds, cashew and raisins are also added flavoured with saffron and green cardamoms. For garnishing poppy seeds (called khashkhash locally) is used. Phirni is made regularly in every Kashmiri household during the month of Ramadan. Firni is also part of Wazwan & serves as an essential dessert in marriages during summers. Firni is a variation of Kheer, a popular dessert in Indian Sub-Continent. The major difference between Kheer and Firni is that in Kheer cooked rice is used whereas the traditional Kashmiri Firni is made using semolina.

Ingredients
1. Full Fat Milk - 1 Litre
2. Semolina (Sooji/Suji) - 1/2 Cup
3. Cashews - 8-10
4. Almonds (Sliced) - 8-10
5. Raisins (Kishmish) - 10-15
6. Dry Coconut (Sliced) - 8-10
7. Condensed Milk - 300ml
8. Sugar - 4-5 tbsp
9. Green Cardamom (Crushed) - 3-4
10. Saffron threads and Poppy seeds ( khashkhash) for garnishing

Method:

1. Heat Milk in a think bottom sauce pan on medium heat
2. Add Sugar, cashews, almonds, raisins, green cardamoms and dry coconut and stir well
3. Let the milk boil and gradually add semolina (Sooji) and keep stirring so that no lumps are formed and at the same time making sure that the milk doesn't stick to the bottom
4. Now add condensed milk and keep stirring
5. Reduce the heat to simmer and cook for 30 to 45 mins or until the milk becomes thick (keep stirring continuously during this time)
6. FIRNI is ready once the desired consistency and thickness is reached.
7. Pour into plates and garnish with saffron threads and some seeds (KhashKhash)
